How to Make Pork, Pepper Stir Fry

Stir frying is an easy way to prepare a great meal. You can even do most of the preparation the night before and put the diced and sliced ingredients in a sealed container and in the refrigerator ready to use the next day. I do this when I know I’ll be either in a hurry the following day or simply not in the mood, due to work or weather.
Pork, Pepper Stir Fry
Ingredients:
1- 1 bunch sliced broccoli
2- 1 peach, cut into wedges, leave skin on
3- 1 red pepper, diced
4- ¼ cup soy sauce, your favourite
5- 2 tsp chili-garlic sauce
6- Vegetable or olive oil
Preparation:
1- put broccoli, red pepper, peach in bowl
2- add chili garlic sauce
3- add soy sauce
4- stir
5- add oil to frying pan, I use my black cast iron pan set on medium high
6- add pork stir and cook for about 4 minutes, no pink should be visible
7- stir in broccoli/pepper mixture
8- cover and cook until vegetables are tender but still firm and peach is soft and firm
9- Serve over noodles, I like chow mien noodles but that is up to you.
This is a quick dish to make especially if you have already done the prep work and all you need to do is cook and serve. I made this last night and was impressed with the ease and the flavour.
It has been added to my list of meals that are a cut above the normal fare but not overly fancy; in other words something I prepare and serve when I felt like a change but not quite fancy enough for a celebration.
I like working with pork. It is versatile and while, not all cuts are that expensive and I always watch for in store specials when I shop. Pork lends itself to a tropical fare and you could add a touch of pineapple to this dish, just a touch. I have not tried that but am curious.
Pork is also great on the BBQ with a spicy BBQ sauce or a pork chop or two with scrambled eggs makes a fine breakfast.
However, it is a pork stir fry that wins over my taste buds; you can make it how or sweet or hot and sweet and serve it over rice, noodles or with sweet potatoes. Soy sauce, hot sauce and the garlic chili sauce used in the above recipe all lend their unique flavour.
